How we rate the difficulty of securing a reservation and the quality of each experience.

COMPLEXITY GUIDE

Each reservation in our directory is assigned a complexity rating from 1 to 5 — or a Black Diamond for the most impossible bookings. The rating accounts for demand, availability windows, booking mechanics, and whether connections or concierge services are typically needed.

Impossible

Max Level

Impossible, or close to it. Limited to locals, invite-only, or gated by unbuyable memberships. Bookings open months to a year in advance with extremely limited seats. Usually multiple barriers stacked together — and your hotel concierge can't help you here.

Legendary

Level 5

3–6 months in advance. Still not guaranteed even if you try to book when reservations open. Expect multiple attempts, extra steps beyond a standard reservation, and limitations that are unique to each spot. Added barriers make persistence and flexibility essential.

Challenging

Level 4

1–3 months in advance. Time is the biggest factor — if you plan far enough ahead, you'll likely get in. Popularity and public interest can also drive up demand, making bookings more difficult. Wait lists are sometimes available as a last measure of hope. Concierge assistance is less likely to help but still doable.

Moderate

Level 3

Book 1 month ahead. Popular spots that reward advance planning. You might not get the exact time or seats you want, but you can probably go. Concierge assistance is usually very helpful at this level.

Accessible

Level 2

Book 1–2 weeks ahead. Availability is generally good with some advance notice. Weekends and peak seasons may require more lead time.

Easy

Level 1

Minimal to no planning needed. Walk-ins often possible, or same-day reservations are readily available.

RATING SYSTEM

Our five-star rating reflects the overall quality of the experience — taking into account the food or activity itself, the atmosphere, service, and whether the experience justifies the effort of securing a reservation. Ratings are based on firsthand visits whenever possible.

Exceptional — a defining experience
Excellent — well worth the effort
Average — checked the box
Forgettable — not worth the effort in hindsight
Avoid — a genuinely poor experience
